This easy muffin green spinach recipe is fun, festive and delicious. Using blender you can make it so fast, faster than any other muffins. These muffins can easily be made vegan by substituting the egg for mashed banana or some flex seeds.
Ingredients:
250 g of flour
1 vanilla sugar
6 tablespoons of sugar
1/2 teaspoon of salt
1 teaspoon of baking soda
120g of raw spinach
2 eggs
3 tbsp coconut oil
120 ml of apple juice.
1. In a medium sized bowl mix flour, vanilla sugar, sugar, salt and baking soda together.
2. Place washed raw spinach in the blender, add eggs, coconut oil and apple juice. Blend it together and than add dry mixture and blend until smooth.
3. Divide the batter evenly between the 12 muffin cups and bake in the preheated oven at 180 °C for 20 minutes or until a toothpick inserted in the center comes out clean.
