Healthy Vegetable Chicken Stew

This chicken stew is enriched with vegetables, homemade broth, barley, peas and chickpeas. It’s all simmered in a rich seasoned chicken broth until tender. Meal is full of protein and healthy carbs. The best part, it’s made all in one pot, with simple ingredients. You can make it in the morning or days in advance because it tastes even better the next day!

Ingredients:

olive oil
1 onion
300g of chicken
salt
sweet paprika
hot peppers powder
100 g of barley
200 ml of homemade broth
bay leaf
1 pepper
50 g of peas
mixture of cornstarch and water
200 g of cooked chickpeas

1. Heat oil in a pot and cook chopped onions until tender. Add diced boneless chicken, salt, paprika, hot peppers powder and cook until chicken changes color. Stir in barley, homemade broth, bay leaf, and chopped pepper.

2. After barley and chicken are cooked, add peas and cook for 2 minutes. Than pour in the mixture of cornstarch (1 tbsp) and water (half a glass) and cook for 2-3 minutes more. In the end stir in cooked chickpeas.

Serve it with some chopped parsley on top.
