Upside Down Cupcakes – Christmas Yellow Cupcakes

Since everyone loves cupcakes, here is one Christmas dessert version to present. They’re extremely easy to make, texture is light and airy and corn flour brings amazing flavor and yellow color. Perfect for family gatherings or just as yummy treats for yourself 🙂

Ingredients:
2 eggs
70 g sugar
1 lemon sugar
200 g cream cheese
20 g corn flour
50 ml milk
organic cocoa powder

1. Beat eggs, sugar and lemon sugar until foamy.
2. Mix in the cream cheese, corn flour and milk.
3. Butter a cupcake pan and fill it with the batter.
4. Bake until edges of the cupcakes turns crispy brown.
5. Take out the cupcakes and place them upside down on the tray.
6. Sprinkle with some cocoa powder.

Broccoli Christmas Tree – Snack Idea

In this video I show you amazing idea of how to make an edible broccoli Christmas tree. I was first inspired by a numerous designs on the internet, and after holidays arrived, I decided to make my own tree snack. You can see it turned out very cute and inspiring. It’s so quick and easy to put together, and the veggies can be served with a creamy dip. So If you like to amaze your family and friends, you should try to make something like this. Here’s my suggestion:

Ingredients:

broccoli
salt
carrot
cherry tomato
cheese
sour cream
pomegranate seeds

1. Cook broccoli florets and stem in salted water just for a few minutes.
2. Cut the carrot into thick slices.
3. Slice the ends of cherry tomatoes to get a round caps.
4. Use shooting star shaped cookie cutters to cut out cheese.
5. Place everything on the plate as shown in the video.

Walnut Pudding Cake – Delicious And Moist

You already know from the title that this cake combination sounds like ultimate perfect dessert. Recipe is easy to make and everyone will love the walnut vanilla flavor in it and also the moist texture. You should definitely try to make this recipe and satisfy your sweet tooth. I recommend serving it with a scoop of ice cream and glass of coffee or milk!

Ingredients:
1 egg
1 cup sugar
1 cup ground walnuts
1 cup milk
1/2 cup oil
1 cup flour
1 baking powder
2 tsp lemon zest

150 ml milk
1 tbsp rum

2 pack vanilla pudding powder (80 grams)
1 L cold milk
6 tbsp sugar
150 g butter

1. In a bowl beat sugar and egg using hand mixer. Add gradually milk and oil while mixing. Add mixture of flour and baking powder. Beat in the walnuts and lemon zest until combined.

2. Pour into greased and floured pan and bake at 180 C for 25 minutes. Pour the milk and rum mixture over the cake and set aside.

3. In a small bowl stir together 2 pack of vanilla pudding powder mix, 6 tbsp of the 1 liter cold milk and 6 tbsp of sugar. Bring to boil the rest of the milk, reduce heat and pour in the mixture. Stir while cooking for at least 1 minute until thick. Turn off the stove and stir in the butter until melt.

4. Pour the fill over the cake and chill. Sprinkle with some grated chocolate.

Easy Meringues | Chocolate Meringue kisses

So these were really fun to whip up. And you need only 4 ingredients.
The meringue mixture is easy to make if you just follow the instructions. You can get this meringue smooth and dreamy by using extra-fine granulated sugar or castor sugar. It allows to dissolve and incorporate into the meringue with ease.

Ingredients:

3 egg whites
150 g sugar
1 packet vanilla sugar
40 g dark chocolate

1. Beat egg whites until soft peaks form – first at lower speed and then increasing speed slowly.
Start adding sugar gradually, beating until combined. It should be thick and shiny.

2. Preheat oven at 100 °C

3. Pipe the meringues on pan covered with parchment paper.

4. Bake for 1 hour and 30 minutes. Let cool completely.

5. Garnish with melted chocolate.

Berries Cake With Gummy Candy

Ingredients:

200 g biscuits
120 g butter
300 g forest fruits
300 g strawberry fruit yogurt
1 vanilla sugar
1 tbsp sugar
6 sheets of gelatin
200 g heavy cream
2 tablespoons sugar
gummy candies

1. Stir together ground biscuits and melted butter. Press the crumbs into the bottom of the springform pan.

2. In a bowl blend forest fruits using stick blender until transform to paste. Add strawberry fruit yogurt, vanilla sugar, sugar and stir with spoon until combined.

3. Prepare gelatin sheets according to instruction and pour it in berries blend. Stir well.

4. In a bowl whip sugar and heavy cream until stiff. Now combine white and pink cream using spoon and spread it on top of the biscuit crumbs.

5. Refrigerate the cake for 4 hours and garnish with gummy candies.

Coconut Balls Edible Decoration

This little holiday edible balls are made from gummy candies and Raffaello balls. They are perfect Christmas treats that looks very decorative.

Ingredients:

gummy cupcakes
gummy spaghetti
Raffaello Ferrero
powdered sugar
water

1. Using small fork make 2 holes on top of the gummy cups. You can help yourself with toothpick. Cut the gummy spaghetti into smaller pieces and push the ends inside the two holes.

2. Using a knife scoop out some of the bottom gummy cups to make place for edible glue.

3. Make edible glue by heating up the small amount of powdered sugar and water. It should look like a glaze.

4. Attach the ornament top using the glue.

Coconut Biscuits Cookies

These are super crunchy, buttery, coconut biscuits. The recipe is simple and easy to make at home, ideal for all the occasions especially during the holiday season. It can be ideal sweet evening snack and can be relished with cup of tea or milk.

Ingredients:

110 g butter
120 g sugar
80 g cream cheese
1 egg
100 g coconut flour
1/2 tsp baking soda
1 tsp baking powder
3 tbsp lemon juice
280 g flour
powdered sugar

1. Beat the room temperature butter and sugar using hand mixer until smooth. Add cream cheese and egg and mix again.

2. In a small bowl stir together coconut flour, baking soda and baking powder. Add the mixture in a butter blend and pour in the lemon juice. Stir using wooden spoon. Add flour and knead into dough.

3. Form the dough into small balls. Roll balls in powdered sugar.

4. Bake at 180°C for 10-15 minutes.

Christmas Poppy Seed Roulade Recipe

This cake roll is so soft and airy, melts in your mouth with a perfect creamy and buttery taste. Poppy seed filling is the real reason why the taste is so special and rich. Roulade is easier to prepare than you might think, yeasted dough is filled with a sweet poppy seed spread and rolled for baking. The ratio is such that there’s not only a hint of poppy seeds, it is filled generously.

Ingredients:

500 g plain flour
1 packet dry yeast
2.5 dl milk
2 egg yolks
50 g melted butter
100 g sugar
1 vanilla sugar
salt

400 g poppy seed
120 g sugar
2.5 dl milk
1 vanilla sugar
2 egg whites

1 egg for coating

1. First combine dry ingredients (flour, yeast, sugar, salt) and then start to knead the dough adding milk, egg yolks and melted butter.

2. When dough is done, cover it using plastic wrap and set aside for 1 hour.

3. Whisk sugar, vanilla sugar and egg whites until smooth. Blend in poppy seed and milk.

4. Roll out the dough onto floured surface into long rectangle. Spread the poppy seed filling and roll the rectangle up. Tuck ends together and half cut the slices all around. Rest the roulade for 20 minutes. Coat with beaten egg.

5. Bake at 180 °C for 20 minutes or until golden brown.

Red Velvet Cupcakes / Christmas Cookies

Make this red velvet cupcakes from scratch this Christmas, you will need a mixer and some cool ingredients. These are incredibly moist and soft. The frosting is very easy to make and overall has smooth and rich taste. This cookies are perfect for your holiday desserts. They are absolutely stunning to serve, and everyone will be amazed with beautiful presentation.

Ingredients:

60 g butter
150 g sugar
1 vanilla sugar
1 egg
1 tbsp cocoa
Food color – red
120 ml yogurt
150 g all-purpose flour
1/2 tsp baking soda
1,5 tbsp vinegar

250 g powdered sugar
50 g butter
120 g cream cheese

1. Mix together room temperature butter, sugar and vanilla sugar. Add gradually an egg, cocoa powder, food color, yogurt, flour, baking soda and vinegar.

2. Line a cupcake pan with paper cases. Divide the batter between the cupcake cases and bake for 20 to 25 minutes at 170°C.

3. While the cakes are cooling, make the frosting. Beat together the butter, icing sugar and cream cheese until well combined. Cover the cakes with the cream cheese frosting and decorate with edible sprinkles.

Christmas Fritule Recipe | Sweet Fritters

Making sweet fritters is maybe a bit hard but after you do it for the first time, you will want to make them again and again. Our family just loves them because they are absolutely addictive. They are traditionally eaten in our country during the Christmas time. This recipe is little different than original, I used dried cranberries and apple to increase juiciness.

Ingredients:

1 yeast cube (fresh)
1 tbsp sugar
200 ml warm water
1 kg flour
salt
packet of lemon sugar
1 vanilla sugar
cinnamon
1 tbsp rum
800 ml water
150 g dried cranberries
1 grated apple
oil
icing sugar

1. Place a cube of fresh yeast (room temperature) into cup and add sugar and warm water. Break the yeast apart using a spoon. Stir well until dissolve. Leave to rise.

2. In a big bowl put flour, salt, lemon sugar, vanilla sugar, cinnamon and stir all. Add rum, proofed yeast, water and punch down the dough using wooden spoon for 10 minutes.

3. Stir in dried cranberries and grated apple. Cover with plastic wrap and leave for 30 minutes to rise.

4. Drop tablespoons of dough into the heat oil and fry the fritters until golden. During the fry turn them over if they do not turn themselves.

5. Remove the fritules onto paper towels to dry and sprinkle with icing sugar.
