Stuffed Peppers 3 Colors | Easy & Healthy Recipe

This is one of our favorite stuffed bell peppers recipe that does not require too much preparation effort. You get your vegetables, protein, and carbs all in one delicious meal. 3-color pepper combination is healthy and flavorful. The flavor is subtle enough to go well with just about anything. You can replace the rice with ground beef, mushrooms or zucchini.

Ingredients:

3 bell peppers (red, green and yellow)
100 g cooked rice
80 g smoked cheese
40 g bacon
1 egg
salt
olive oil

1. Cut the top of the peppers and remove the seeds and membranes. Chop remaining of peppers around the stem and stir it in a small bowl with cooked rice, chopped cheese and bacon.
2. Beat the egg in a plate with a pinch of salt.
3. Oil a deep baking pan and place the peppers in. Stuff them with rice mixture and beaten egg. Spread the remaining rice mixture around peppers and drizzle all with some oil.
4. Bake in preheated oven at 180 °C for 30 minutes.
