Super Soft Moist Coconut Cake

This classic coconut cake recipe uses coconut milk and rest of other amazing ingredients to make the cake extra soft and moist. It’s easy and quick to make as homemade recipe and perfectly flavorful. It’s absolutely yummy served either hot or cold.

Ingredients:

200 g flour
1/2 tsp baking soda
1 egg
1/3 tsp salt
100 g raisins
lemon zest
300 ml coconut milk
1 lemon juice
1 pack vanilla sugar
2 tbsp honey
2 tbsp polenta
icing sugar

1. Stir together flour and baking soda in the bowl.

2. In a baking dish whisk egg. On top of the egg sprinkle salt, raisins and lemon zest. Add coconut milk, lemon juice, vanilla sugar, honey and polenta. Stir well using spoon.

3. Bake at 170 °C in preheated oven for 30 minutes or until toothpick inserted in center comes out clean.

4. Cool down and sprinkle cake with some icing sugar.
